HDRI is one of my favourite topics - great to see it mentioned here! The ideal scenario would be more images, with much more extreme exposure ranges. If you try maybe five images, with exposures of -2, -1, 0, +1, +2, you can get some incredible images resulting. Expose totally for the shadows at the lowest end, and only highlight at the top end.

I use spherical HDRI images as lighting sources for 3D renderings, and the results are incredible - completely realistic.
