I'm always germinating 'fresh' seeds. One day is enough drying time. I just watch the color of the shell. When they're absolutely fresh, they're darker and shinier. Takes about six hours in my (dry climate) area for them to look dry enough.
yep, drying is more important for the longevity of the seeds - how long they stay viable.
so you want to leave them out to dry befor you store them for the future.
i was watching a prog about the millenium seedbank the other day and they said that for every 1% you reduce the moisture content of seeds you double the time that they will stay viable for.
