Makes about 30 truffles
Ingredients
8 ounces bittersweet chocolate, coarsely chopped
1/2 cup coconut milk
1 tablespoon Butter replacement of choice. Earthbalance is mine.
Mint Oreos
QWISO in a metal bowl. Best to use the bowl to make the ISO so all you need to do is infuse directly. Avoids uneeded steps, like scraping.
Method
Place a saucepan, filled halfway with water over medium-low heat. Place a small metal bowl on top of the saucepan to create a double boiler. Add the chocolate to the bowl, and melt over moderate heat. about 185f is a good temp. Setting 4 on my stove.
Pour the coconut milk into the sticky bowl of QWISO and carfully heat to 185f. Add the Earth Balance. Whisk the well with a wire whip until the coconut milk has fully desolved the "honey". Do this slowly as it warms up, no scraping.
While both the chocolate and Coconut milk are warm/hot, add the chocolate to the bowl of QWISO milk while whisking it together.
Once it's all mixed up good refrigerate until firm.
In a food processor chop 1/2 a pack of mint oreos, or regular if you dont like mint. Then put it in a large bowl. Make nice size balls of chocolate and roll it around in the oreo mint crumbs. Put in mini baking cups or just on wax paper. Chill until firm. Store in an airtight container in the refrigerator for up to 2 weeks or freeze with care.
Tips: ware gloves to roll and coat unless you want to be high when youre done. This will get messy so plan ahead.
We used a gram of honey and made 4.5 time the recipie. (185 small marble sized balls) Just licking the thuroughly scrapped spatula was a four hour trip to the clouds. One of these could be divided by 3 ppl or 2 if you have a high tolerance.
