Here's a quick cucumber-tomato salad I whipped up today with some excess veggies from the garden. Healthy and easy to make!
2 cucumbers
half large tomato
half green pepper
1 can garbanzo beans
spring onions
chopped dill
extra virgin olive soil
salt and pepper
Mix and refrigerate. Tweak recipe as you please.
I will probably serve it with plain yogurt and tortillas.
