I thought I'd try something different. Im always making cookies, brownies and rice krispie treats. I decided to make some cheese cake..... change it up a bit. Heres what I did.....
Crust:
1 cup walnuts, food processor until largest pieces are split pea size.
2 table spoons sugar
2 table spoons butter
2.0 g of 73 micron bubble hash.
Mix walnuts and sugar in a medium sized bowl.
Put a glass measuring cup inside a small pot of shallow water. Melt butter on medium heat. Add hash. Keep on low boil, stirring frequently until hash is desolved. About 15-20 mins.
Add butter to walnuts and mix well. Press walnut mixture into pie pan evenly, covering sides.
Cheese cake batter:
3 packages (1 1/2 lb.) cream cheese at room temp.
4 eggs at room temp
1 1/2 teaspoon vanilla
1 1/2 teaspoon lemon juice
1 1/3 cup sugar
1/4 cup sour cream
In a large bowl, beat cream cheese till fluffy. Add the rest of the ingrediants, one at a time, mixing well between adding each one. Scrape the sides of the bowl well! This is important!
Poor batter into pie crusted pans.
There are 2 ways to bake a cheese cake. You can eather do a water bath, which is the preferd method by food critics. Or a heat reduction method.
Water bath method:
Using a spring form pan... Wrap the bottom and sides of with aluminum foil before pouring in your batter. Place in a baking pan of shallow boiling water. Bake in a preheated 350 degree oven, 60-90 mins, checking often after 1 hour.
Non water bath method:
Preheat oven to 400 degrees. Place the cheese cake on a cookie sheet. After putting it in the oven, turn the oven temp to 200 degrees. Bake 60-90 mins, checking often after 1 hour.
The cake is done when it is firm to touch but slightly soft in the center, or reaches 155 degrees.
Mine is in the oven now. I've got some pictures, but cant figure out how to transfer them to my computer. Im not very computer savy...... sue me.
